Caprese grilled cheese with a twist

Ingredients (for 1 toasted sandwich):

  • 2 slices of rustic multi-grain bread
  • ¼ ball of buffalo mozzarella, sliced
  • A handful of sun-dried tomatoes
  • ½ avocado, sliced thin
  • Olive oil

Preparation:

1. Drizzle olive oil on both sides of the bread slices.
2. Top one slice of bread with the mozzarella, basil, sun-dried tomatoes and avocado. Then cover it with the second slice of bread.
3. Put the sandwich in a Toastabag and then briefly place it in the toaster or panini maker and you're done!


Brie and strawberry grilled cheese



Ingredients (for 1 toasted sandwich):

  • 2 slices of brioche bread
  • 2 large strawberries or 3-4 small strawberries (cut into slices)
  • Slices of brie cheese
  • 4 - 5 basil leaves
  • Butter

Preparation:

1. Spread a thin layer of butter on both sides of the 2 slices of brioche bread.
2. Top one slice of bread with brie, adding the basil leaves on top and finishing with the strawberry slices. Then cover it with the 2nd slice of brioche bread.
3. Put the sandwich in a Toastabag and then briefly place it in the toaster or panini maker and you're done!


Caprese grilled cheese



Ingredients:

  • For four grilled cheeses
  • 8 ounces of buffalo mozzarella
  • 8 slices of white bread
  • 4 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • 2 small ripe tomatoes
  • 2 tablespoons of pesto
  • Fresh basil leaves, chopped

Preparation:

1. Spread the pesto on one side of each slice of bread. Drizzle the other side with olive oil and garlic. Slice the tomatoes and the buffalo mozzarella. Chop the basil leaves into small strips.
2. Place the mozzarella, tomatoes and basil on the pesto-covered side of the bread. Top the bread with another slice of bread, pesto side down.
3. Place the sandwich in the Toastabag and put the Toastabag in the toaster, and you're done!


Bacon & guacamole grilled cheese



Ingredients:

  • 2 slices of bacon
  • 2 slices of (sourdough) bread
  • 1 tablespoon of butter (room temperature)
  • 1 small red onion, sliced into thin rings
  • 4 slices of cheddar cheese
  • 2 tablespoons of guacamole (room temperature)
  • 1 handful of tortilla chips, crumbled
  • Fresh basil leaves, chopped

Preparation:

1. Fry the bacon until crispy then place on a paper towel to drain the fat. Fry the onions until soft.
2. Spread the butter on one side of each slice of bread. Place two slices of cheese on the unbuttered side of the bread, followed by the onions, guacamole, bacon, crumbled tortilla chips and another two slices of cheddar cheese. Top it with another slice of bread, buttered side up.
3. Place the sandwich in the Toastabag, then place the bag in the toaster or panini maker, and you're done!


Blueberry and goat's cheese grilled cheese



Ingredients:

  • 2 slices of multigrain bread
  • 1 ounce of blueberries (if you're using frozen blueberries, thaw them first)
  • 2 ounces of soft, plain goat's cheese (room temperature)
  • A handful of basil leaves, chopped into thin slices

Preparation:

1. Fry the bacon until crispy then place on a paper towel to drain the fat. Fry the onions until soft.
2. Spread the butter on one side of each slice of bread. Place two slices of cheese on the unbuttered side of the bread, followed by the onions, guacamole, bacon, crumbled tortilla chips and another two slices of cheddar cheese. Top it with another slice of bread, buttered side up.

Sausage, scrambled egg, and cheese sandwiches

Layercooked sausage patties, scrambled eggs, and slices of Cheddar on kaiser rolls. Toast in the oven until melty, then cut into wedges. Your go-to hangover cure has now officially become brunch-worthy fare.

Tomato & bacon grilled cheeses

Layer thin slices of tomato, grated Gruyere cheese, and cooked bacon between slices of sourdough bread. Spread outsides with a bit of mayo (this lets the bread get golden brown without burning when you inevitably walk away to check your texts). Toast sandwiches in a nonstickskillet until melty and browned on both sides. Cut them into quarters.

Fried egg, pesto, and mozzarella sandwiches

Spread slices of multigrain bread with pesto (storebought’s fine, no one will ever know) and top with slices of fresh mozzarella. Toast in the oven until melty. Top with fried eggs and sandwich together. Cut into quarters.


Apple Pie grilled cheese



Ingredients:

  • 4 ounces of mascarpone cheese
  • 2 tablespoons of honey
  • 2 tablespoons of butter (room temperature)
  • 8 slices of cinnamon raisin bread
  • 1 Granny Smith apple, cored and thinly sliced
  • 2 tablespoons of brown sugar
  • Vanilla ice cream

Preparation:

1. Mix the mascarpone with the honey until fluffy and well-mixed.
2. For each grilled cheese: spread the butter on one side of two slices of bread to make the outside more flavorful. Turn the bread slices over and spread the sweetened mascarpone on each slice of bread. Place the apple slices on one slice of bread and then place the other slice on top. Sprinkle some brown sugar on top of the sandwich.
3. Place the sandwich in the Toastabag, then place the Toastabag in the toaster or panini maker until the filling is warm and the bread is crispy, which takes about 3 to 5 minutes. Serve the sandwich with a scoop of vanilla ice cream.
